Kick up the heat with a spicy cream cheese salsa dip.

Yesterday I think the temp. maxed out at 95 degrees, which combined with Minnesota humidity is HOT. Now perhaps your first thought would be for ways you can cool yourself down, but for me I started thinking about spicy salsa and dips. I recently tried a salsa cream cheese dip they were giving samples of at Cosco. I have to say it was pretty good, but instead of buying the pre-made stuff I figured it would be easy enough to do something similar at home. I got the food processor out and was able to easily create of very similar tasting dip without all the extra questionable ingredients.

If you aren't a huge spice fan you might want to try less jalapeno to start and add more as you go. Just a thought because this dip does have a kick. : )

What You'll Need: 2+ cups of dip
  • 1 jalapeno with seeds removed
  • 1 fresh tomato I used an heirloom variety that had very little juice or seeds, you might want to try a Roma tomato. The more liquid that's in the tomato, the runnier the dip will be.
  • Juice of 1/2 a lime
  • 1/4 cup onion
  • 1/3 cup cilantro
  • 8oz. cream cheese
Getting Started:
Grab your food processor, toss in all your ingredients and process until smooth. Refrigerate until chilled, then grab some chips and enjoy! Now that wasn't too hard was it? : D

Oh, you don't have a food processor, no problem just chop everything up as finely as possible and mix together. It might take a bit more work and be a chunky version, but it should still taste great!

I love easy, tasty treats!
