What was on our dinner table tonight?

We had some fabulous enchiladas, recipe courtesy of  Diana Bauman and her blog A Little Bit of Spain in Iowa, and a refreshing, light salad to go with. We've made these enchiladas a hand full of times now and love them every time. They are the real thing and much, much better than what you'd get at the typical Mexican chain. Yummy! Nice meal for the end of the weekend.
