Kishk is a Middle Easter dish I believe and used in different ways, but not sure they ever use it with a different grain. Just off hand I can't think of a gluten free grain to use. Not sure buckwheat would work, although you could certainly try. (Buckwheat is gluten free from my understanding) Sorry I can't be of more help.
